CA Global: Africa Positions has a client that is in need of a Food and Beverage Manager. The position is based in Zambia and Tanzania respectively.
Overview:
The Food & Beverage Manager will be accountable for the Project / Camp achieving the specified standards of performance in all areas of the Operations. The areas of operation may include, but are not limited to:
· Mess & Food Service management and with the exception of extenuating
circumstances The Food & Beverage Manager will be a regular ‘face at meal
times, supervising or assisting wherever the need arises
· Overall responsibility for the production of food to then highest standard
· Camp management including bars, club houses, commissary and any other
facility covered in your scope of work.
· Cleaning Services and Procurement Services where applicable.
· Camp Set Up and Mobilization Services including Remote Camps operated by
the Project
- Maintenance Management where applicable
- Grounds and Garden Maintenance where applicable
- Directors Dining, Party Catering and Special Functions
- Asset Management
- Developing 28 day cycle menus on a regular basis
- The Food & Beverage Manager will be responsible for overseeing his budget to ensure he achieves the above scope of work and developing their own cost control measures
- The Project will be audited periodically and the Food & Beverage Manager must
ensure that full cooperation is extended to these auditors and their information requests
Camp Stock Control, Stock Levels, Stock Checking, Stock Variances & Spoilages, and Stock Ordering:
- The Food & Beverage Manager will oversee all aspects of the camp stock control
function including spot checking stock records for accuracy
- The Project Manager will screen and approve all stock orders and issues as well as supervise all physical stock-takes
Camp Petty Cash or Bank Expense Accounts:
- The Food & Beverage Manager will ensure that all expenses have corresponding signed valid receipts and supporting paper work including any necessary valid Tax/VAT receipts for the expenses
Camp Health & Safety:
- The Food & Beverage Manager will ensure that his project conforms to the company and clients Health & Safety & Environmental Policies
- This includes ensuring that the company project completes all the relevant camp paper work, auditing and employee training as per company policies
- In subsequent audits references will be made to the previous audit and The Food & Beverage Manager must ensure he is managing with a dated action plan the previous audit points raised and can provide feedback to the auditors
Human Resources:
- The Food & Beverage Manager must also ensure that local cultural and religious factors are taken into account for Human Resources Management
- The company expects staff on site to receive a daily pre-start meeting ( a 5 minute presentation from Food & Beverage Manager with no input from other staff as well as a weekly toolbox meeting (where departmental issues are discussed between all staff)
Public Relations:
- The Food & Beverage Manager is expected to carry himself in a respectable manner at all times
IT Management:
- The Food & Beverage Manager must oversee the correct operation of the IT equipment and ensure it is not abused
- He will follow the company IT policies and procedures at all times
Requirements:
Education : Relevant qualification in Food and Beverage or Hospitality
Industry Background : Experience in a similar role would be advantageous
Experience : Minimum 5 years experience
